Cricket and Coconut Rice Cakes.
Ingredients: ½ cup of white rice, 1 tsp lemon juice, 6 tsp of toasted coconuts, 8 tsp tomato paste, 1.5 oz. chopped crickets, 1 bird egg, pinch of salt. Mix together rice, crickets, and lemon juice and steam for 30 to 35 minutes until cooked. Remove rice and allow it to cool. While still slightly warm incorporate the egg, coconut, salt, and tomato paste. After all ingredients are combined mold them into equal-sized balls and flatten. Place cakes into hot oil and cook until golden brown. This recipe provided by Enimia Pisoni, niece of Marcus DiPalo.
